A New Mexico favorite! This easy recipe goes a long way! All you need is:
- 5 medium sized yukon potatoes
- ½ yellow onion diced
- Olive oil/Butter
- Garlic powder
- Salt to taste
- Tsimayó Hot Sauce
Boil 5 potatoes for 30 minutes. Let cool and quarter potatoes and slice into ½ inch thick slices. In a frying pan add 2 tablespoons of butter and 2 tablespoons of olive oil. Add onions and let simmer in butter slightly before translucent. Add olive oil and potatoes, salt and garlic powder. Toast up till golden brown. Serve with your eggs cooked to your liking. Add Tsimayó Hot Sauce to desired spice/heat level. Remember, a little bit goes a long way!
